Cinnamon
Our Cinnamon creamed honey is made from our Central California Wildflower honey. This Cinnamon creamed honey is an attention getter! The flavor is bold and would be excellent in your tea or coffee. Organic Cinnamon powder was added to the mixture to produce a noticeable Cinnamon flavor. Creamed honey is 100% real honey with liquid honey mixed in with crystallized honey. It is mixed in a machine called a creamer for several days, bottled, and then stored in a 56 degree environment for up to 2 weeks. This gives the creamed honey time to “set up” and become a spread or a butter like product. The reason it is called “creamed honey” is because the final product has a creamy texture like creamy peanut butter. You can enjoy our Cinnamon creamed honey on toast, a biscuit, a bagel, or just by the spoon.

Creamed Honey is just simply crystallized honey. All natural honey will crystalize at some point every year and is a natural process of honey. The sugar crystals in the honey will grow when the temperature of the honey falls below 57 degrees. At this point, the sugar crystals will increase in size and expand to the other crystals around it forming a large mass. Eventually, the liquid in the honey will solidify and become hard to use.
So creamed honey is where those large crystals are broken down or crushed and the texture becomes very smooth. This version of honey is widely popular in Europe and can be easily found vs. regular honey that is preferred here. Creamed honey is becoming increasingly popular in the US and flavors are added to it to make them even more appealing.
Currently, our Creamed Honey flavors are made with powders and not oils. The flavors that we currently offer are Cinnamon, Lemon, Original, and Pumpkin Spice. They are available in 1/2 pint jars yielding 10 ounces per jar. A lot of effort goes into making creamed honey and so the process time can take up to 12 days to make a batch of creamed honey. More flavors will be added in the future.
